Sugar Cookie Fruit Cup

Have you ever had a fruit pizza? If you have, this is a similar recipe with a twist. If you haven't, let me briefly explain a fruit pizza.

You take a sugar cookie dough (either homemade or store bought), spread it on a greased cookie sheet or pizza pan, bake it, then top with this yummy "icing" (recipe found below). After that, dice up whatever fruit you desire on top of that. Slice then serve! Super easy!

I wanted to kick up this recipe a notch, so I decided to try & make dessert cups from the dough.




I made a homemade sugar cookie dough then took a small piece, maybe an inch blob, flattened it in my my hands (you could do this with a rolling pin too). Then I placed it on a greased upside down MINI muffin pan. Notice I didn't take the dough all the way to the end of the muffin part. Turns out it will bake down all the way.

I've had it with this photo! I've edited it for forever and it refuses to turn the way I saved it. Oh well, you get the idea.

If your cookie over bakes, you can just take a knife & cut off the excess while it's still warm.

Let the cookie cool completely then simply pop it off the pan (it comes off really easy). From there, fill it however you like. I made a mix of:

4oz softened cream cheese
1 1/2-2 cups powder sugar
Blend those 2 things together till smooth, then fold in half a small container of cool whip.

I put a dollop of the icing in the bottom of the cup, then placed in fruit (strawberries, kiwi & mandarin oranges, but use what you like). Then placed a little icing on top.

This is a versatile recipe. Use any cookie dough you like, fill with ice cream, pudding, really fill with anything! Another tip I read online is to substitute half the butter for crisco in your cookie recipe to keep the cookie from melting all over the pan while baking. I didn't do this but I can see how this would be handy. I really had to be careful how much cookie dough I used when forming the cups.
